A Great Hard-boiled Egg
Tip: older eggs seem to peel better (at least a week in the fridge)
put eggs in water on stove
bring to boil
boil for 3 minutes
cover
let stand for 18 minutes
rinse in cold water and cool
eggs should peel wonderfully
eggs shouldn't be green inside

I usually turn off the burner as soon as it starts boiling, and then I just let the water cool down. I like your idea to let it boil for a few minutes. I'll give this a try next time I make hardboiled eggs.
